Vera’s Chicken Pot Pie!
Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Chicken Pot Pie
1 can condensed cream of chicken soup 1 pkg (9 oz) frozen mixed vegetables 1 cup cubed cooked chicken - 1/2 cup milk 1 egg - 1 cup baking mix
Thaw vegetables. In pie plate mix soup, vegetables, and chicken.
Mix milk, egg, and baking mix. Pour over chicken mixure and bak for 30 minutes at 400 degrees.

Broccoli Casserole
2 (10 oz) packages chopped broccoli 2 cups instant rice - 1 can cream of celery soup 1 can cream of mushroom soup
1 large jar of Cheez Wiz
Mix all ingredients in a casserole dish. Bake at 350 degrees for about 45 minutes. Enjoy!

November 21, 2007 - Wednesday Vera’s Holiday Brown Candy!
Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Holiday Brown Candy
6 cups white sugar - 2 cups cream 1/4 tsp baking powder - 1/2 cup oleo 1 tsp vanilla - 4 cups broken pecans
*Warning* This recipe makes 3 pounds of candy!
Pour
2 cups ofthe sugar into a heavy aluminum or iron skillet and place over
low heat. Stir with a woden spoon and keep the sugar moving so that it
will not scorch for 15 minutes, until it's about the color of light
brown sugar syrup.
As
soon as you have the sugar heating, pour the remaing 4 cups of
sugar together with the 2 cups of cream into a deep, heavy kettle and
set it over low heat to cook slowly while you are melting the sugar in
the skillet.
As
soon as the sugar is melted, begin very slowly pouring it into the
kettle of boiling milk and sugar, keeping it over very low heat and
stirring across the bottom of the pan constantly.
Continue cooking and stirring until the mixture forms a firm ball when dropped into cold water.
After
this test is made, turn off the burner and immediately add the baking
soda while stirring hard as it foams up. As soon as the baking soda is
mixed, add the oleo, allowing it to melt as you stir.
Set
the pan of candy off the stove and let cool about 20 minutes,
until it is lukewarm. Add the vanilla and beat until the mixure is
thickened and heavy and takes on a dull appearance instead of a glossy
sheen. Add the pecans and mix.
Turn into two 13X9X2-inch pans where it can be cut into 1 inch squares when cooled.

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Brownies
1 stick melted oleo - 1 cup sugar 1 tsp vanilla extract - 2 eggs 1/2 cup flour - 1/3 cup Hershey's cocoa 1/4 tsp baking powder - 1/4 tsp salt
1/2 cup chopped nuts
Stir
together oleo, sugar, and vanilla. Add eggs and beat well with spoon.
Stir together flour, cocoa, baking powder, and salt and gradually add
to egg mixture, beating till well blended. Stir in nuts. Spread batter
evenly into greased baking pan. Bake at 350 degrees 20 to 25
minutes or until brownies begin to pull from sides of pan. Let cool.
Frost with frosting and cut into squares.
Brownie Frosting
3 tbs soft oleo - 1 cup powdered sugar 2 tbs milk - 3 tbs Hershey's cocoa 1 tbs honey - 1/2 tsp vanilla extract
Beat oleo, cocoa, honey, and vanilla until blended. Add powdered sugar and milk and beat till you can spread it.

November 7, 2007 Vera’s Potato Dumplings
Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Potato Dumplings
6 cups warm mashed potatoes 6 cups all purpose flour 3 eggs - 1 tsp baking powder 1/2 tsp salt
Beat
eggs and blend in the potatoes. Add flour, baking powder, and salt,
mixing well until smooth. Dust hands with flour and form into 3 to 4
inch balls.
In
a large stock pot, bring a large quantity of water to a boil (If you
add 1 tbs of shortening to the water, it won't boil over). Drop the
dumplings into the water, cover and boil about 30 minutes.

November 2, 2007 - Friday Vera’s Butterscotch Snack Cake!
Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Butterscotch Snack Cake
1 pkg cook and sere butterscotch pudding 2 cups milk 1 pkg yellow cake mix 11 oz butterscotch baking chips 1/2 cup chopped pecans or walnuts
Combine
pudding mix and milk and bring to a boil over medium heat, stiring
constantly. Stir in cak mix and pour in greased cake pan. Sprinkle with
butterscotch chips and nuts. Bake at 350 degrees for 35-40 minutes or
until toothpick inserted near center comes out clean. Let cool and
enjoy!

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Pumpkin Bars
4 eggs, 1 cup vegetable oil 1 2/3 cup granulated sugar 1 16 oz can pumpkin 2 cups all purpose flour 1 tsp ground cinnamon 1 tsp salt, 1 tsp baking soda
Beat together eggs, sugar, oil, and pumpkin until light and fluffy.
Stir
together flour, baking powder, cinnamon, salt, and soda. Add to pumpkin
mixture and mix thoroughly, spread batter in ungreased 15X10 pan. Bake
at 350 degrees for 20 to 30 minutes and let cool. Frost with Cream
Cheese Icing and cut into bars.
Cream Cheese Icing
1 package (3oz) softened cream cheese 1/2 cup softened oleo, 1 tsp vanilla 2 cups sifted confectioners sugar
With an electric mixer cream the cream cheese, butter, and vanilla. Add sugar a little at a time an mix until smooth.

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Farmer's Market Salad
1 cup sour cream 1 envelope Italian salad dressing mix 4 cups chopped lettuce 3 cups assorted sliced or chopped vegetables 1 can (14 oz) artichoke hearts, drained and chopped
Mix sour cream and salad dressing mix. Refrigerate.
Toss lettuce, vegetables, and artichokes in large bowl. Top with sour cream mixure, toss until evenly coated. Enjoy!

September 25, 2007 - Vera’s Peanut Butter Cookies!
Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Peanut Butter Cookies
3/4 cup creamy peanut butter 1/2 cup oleo - 1 1/4 cups light brown sugar 3 Tbs milk - 1 Tbs vanilla - 1 egg 1 3/4 cups all-purpose flour 3/4 tsp salt - 3/4 tsp baking soda
Combine
peanut butter, oleo, brown sugar, milk, and vanilla. Beat at medium
speed with electric mixer till well blended. Add egg and beat till
blended. With blender on low speed, add flour, salt, and baking soda
and mix until blended. Drop heaping teaspoonfulls 2 inches apart on
ungreased baking sheet. Flatten slightly in crisscross patterns with
fork. Bake at 275 degrees until set and beginning to brown (about 7 to
8 minutes). Let cookies cool and enjoy!

September 1, 2007 - Vera’s Fried Peaches!
Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Fried Peaches
3 pealed ripe peaches 3 tbs butter 6 tsp brown sugar 1/4 tbs ground cinnamon juice of 1/2 fresh lemon
Cut
peaches in half, removing the stones. Melt the butter in skillet on low
heat. Add the peaches, cut side down, for 1 minute. Flip over.
Sprinkle
the brown sugar and cinnamon evenly overthe peaches. Fry for 10 to 15
minutes on low heat, basting the peaches with butter. Right before
serving, sqeeze the lemon over the peaches.

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Sesame Chicken
1 tbs ginger - 1 tsp sesame seeds 5 tbs honey - ½ cup soy sauce 1/3 cup water - 1 cup sugar 1 tsp mince garlic 16 chicken wings
In small saucepan, mix all ingredients except chicken. Bring to a boil and cook for 2 minutes.
Place chicken in baking dish. Pour sauce over chicken and bake 350 degrees for 35 minutes, basting every 5 minutes.

Chicken and Rice
2 fryers - cut up 1 can cream of chicken soup 1 3/4 cups water 2 cups regular rice 1 can cream of mushroom soup 1 envelope dried onion soup
Put
rice on bottom of large pan, lay chicken on top and sprinkle with onion
soup. Mix soups and water together and pour over chicken and rice
mixture. Cover with foil and bake at 350 degrees for 1 1/2 hours. Enjoy!

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Coconut Cream Cake
1 pkg yellow cake mix (2 layer) 1 pkg instant vanilla pudding mix (4 servings) 1 1/3 cup water - 4 eggs, separated 1/4 cup oil - 1 cup nuts 2 cups coconut
Blend
cake mix, pudding mix, water, egg yolks, and oil in large mixer bowl.
Beta at medium speed with electric mixer. Stir in coconut and nuts.
Fold in stiffly beaten egg whites. Pour into 3 greased and floured 9
inch layer pans. Bake at 350 defrees for 35 minutes. Let cool.
Coconut Cream Cheese Frosting
4 Tbs oleo - 18 oz cream cheese 1/2 cup nuts - 2 tsp milk 3 1/2 cups sifted confectioners sugar 1/2 tsp vanilla - 2 cups coconut
Melt
2 tablespoon oleo in skillet. Add coconut and stir constantly over low
heat until golden brown. Spread on paper towels to cool. Cream 2
tablespoon butter with cream cheese. Add milk and nuts.

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Banana Pudding 6 oz vanilla instant pudding mix 3 cups milk - 14 oz sweetened condensed milk 6 sliced bananas - 12 oz vanilla wafers 8 oz whipped topping - 1/2 cup chopped pecans
Beat
pudding mix and milk together for two minutes. Fold in whipped topping.
Add condensed milk and mix well. Stir in bananas. Layer vanilla wafers
and pudding in serving bowl. Chill for one hour and sprinkle with
pecans. Enjoy!

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Chocolate Sheet Cake
2 cups flour - 2 cups sugar 1/4 tsp salt - 1 cube Oleo 1/4 cup cooking oil - 1 cup water 4 Tbs cocoa - 1/2 cup buttermilk 2 eggs - 1 tsp soda - 1 tsp vanilla
Sift
flour, sugar and salt into a mixing bowl. Put oleo, oil, water, and
cocoa in a saucepan and bring to a boil. Pour over dry
ingredients and stir well. Add buttermilk, eggs, soda, and vanilla.
Beet well and pour into a greased and floured 11 1/2 X 17 pan or cookie
sheet. Bake at 400 degrees for 20 minutes. Ice while still warm and
sprinkle with chopped nuts...
Icing For Cake
1/2 cube oleo - 4 Tbs cocoa 6 Tbs milk - 1 box powdered sugar 1 tsp vanilla - 2 Tbs peanut butter
Put oleo, cocoa, and milk in a saucepan and bring to a boil. Add sugar, vanilla, & peanut butter and mix it together.

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Hot Tamale Pie
Note: This one is very basic and will take a little work to figure out...
2 cups cold cut up roast or steak 1 1/2 cups gravy - 1 minced garlic clove 1 tbs chili powder - 1 tsp salt 1 quart cooked mush
Mix
meat with gravy, garlic, chili powder, and salt. Line the bottom and
sides of casserole dish with mush. Pour in the meat mixture and put
mush in pieces over the top. Bake (no temperature given) for 20 to 30 minutes.

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Fresh Apple Cake
2 cups sugar - 1 1/2 cups cooking oil 2 beaten egs - 2 Tbs vanilla 2 1/2 cups all purpose flour 1 tsp cinnamon - 1 tsp baking soda 1/2 tsp salt - 3 cups diced apples 1 cup chopped pecans
Mix
sugar and oil. Beat in eggs and vanilla. Mix flour, cinnamon, soda and
salt together and add into sugar/oil mixure, then stir in apples and
pecans. Pour in a greased and floured pan and bake at 350 degrees for
60 to 65 minutes or until a toothpick stuck in it comes out clean.

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Chocolate Pound Cake
1 cup oleo - 3 cups sugar 6 large eggs - 2 1/2 cups cake flour 1/4 tsp salt - 2/3 cups cocoa 1 cup whipping cream - 1 tsp vanilla
Mix oleo at medium speed until creamy. Gradually add sugar and continue to mix 5 to 7 minutes. Mix eggs until blended.
Sift
flour and combine with salt and cocoa. Add to butter mixture
alternately with whipping cream, mixing at low speed. Stir in vanilla.
Pour in greased and floured pan and bake for 1 1/2 hours at 325
degrees. Let cool in pan for 15 minutes. Enjoy!

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Spinach Salad
Fresh Spinach - Chopped Green Onions Red Radishes sliced mediun thin 2 to 4 sliced hard boiled Eggs sprinkle of Celery Seed sprinkle of Salt and Pepper Mayonnaise -Sour Cream Salad Mustard to taste
Sort
and wash thourougly the desired amout of fresh spinach. Dry by shaking
gently in a large cloth. Place in a container large enough to toss the
salad without bruising the spinach.
Add
onions, radishes, eggs, celery seed, salt, and pepper. Blend 1/2
mayonaise with 1/2 sour cream and mustard and dress salad with the
mixture. Toss gently and chill well. Enjoy!

like to let everyone know that yesterday's blog post ("Things

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Banana-Blueberry Muffins
2/3 cup milk - 1/4 cup vegetable oil 1 medium mashed ripe banana 2 cups flour - 2/3 cup sugar 2 1/2 tsp baking powder - 1/2 tsp salt 1/4 tsp ground nutmeg - 1 egg 1 cup blueberries, thawed and well drained if frozen
Grease
bottoms of 12 medium muffin cups. Beat milk, oil, banana, & egg in
large bowl, stir in remaining ingredients except blueberries until
flour is moistened. Fold in blueberries and divide evenly among muffin
cups (almost full). Bake a 400 degrees for 18 to 20 minutes until
golden brown and then immediately remove from pam. Enjoy!

Here's a new recipe from out of the bag...
Hot Chicken Salad
Combine and place in dish:
4 cups cooked, cooled, and cut up chicken chunks 2 Tbs lemon juice - 3/4 cup mayo 1 tsp salt - 1/2 tsp seasoning salt 2 cups chopped celery - 2 fine cut pimentos 1 tsp minced onion - 4 sliced hard boiled eggs 3/4 cup condensed cream of chicken soup
Top with:
1 cup grated cheese 1 1/2 cups crushed potato chips 2/3 cups finely chopped toasted almonds
Let stand overnight in refrigerator, then bake at 400 degrees for 20 minutes, enjoy!

Here's a new recipe from out of the bag...
Baked Grits and Cheese
2 cups water - 1 cup uncooked corn grits 1/2 cup evaporated milk - 2 Tbs Oleo 1 1/2 cups cut up cheese 3/4 tsp salt - 2 eggs
Boil
water. Slowly stir in grits. Cook and stir until thick (1 or 2
minutes). Stir milk, oleo, and most of the cheese into the grits. Beat
eggs and stir unto the grits. Pour grits into greased baking pan and
sprinkle rest of cheese on top. Bake at 375 degrees about 35 minutes
until knife stuck in center comes out clean.

Here's a new one from the bag that Grandmother Vera gave Dad before she passed away...
Macaroni and Cheese Loaf
3/4 cup macaroni - 1 cup milk 1 cup fresh bread crumbs - 2 tbs chopped green pepper 1 tbs parsley - 2 eggs, lightly beaten 2 tbs chopped onion - 1 tsp salt 1 tsp pepper - 1 tbs melted butter 1 cup grated cheddar cheese
Cook
Macaroni by package directions, drain well, and add remaining
ingredients. Spoon into 9X5 loaf pan and bake at 325 degrees for 20 to
30 minutes.

Apple Cake
3 eggs - 2 cups flour 3/4 cup butter - 2 cups sugar 2 tps ground cinnamon - 2 tsp baking soda 1/2 tsp ground nutmeg - 1 tsp vanilla extract 4 1/2 cups peeled apples finely chopped
Cream
butter and sugar. Beat in eggs one at a time. Sift together dry
ingedients and add egg mixture with apples. Stir in vanilla. Pour into
two 8 inch greased and floured pans and bake 40 to 50 minutes at 350.
Cool for 5 minutes and serve warm.
Caramel Sauce
3/4 cup butter - 1 cup sugar 1 cup brown sugar - 3/4 cup heavy cream 1 1/2 tsp vanilla extract
Combine
all ingediants and bring to a boil over medium heat, stirring
constantly. Remove from heat and spoon over individual servings of warm
cake.

Would like to remind everyone that this blog is archived (and divided into categories) at:
Coffee Icing
3 tbs soft oleo - 1/8 tsp salt 3 drops of vanilla extract 1/4 cup hot stong coffee
3 cups confectioner's sugar
Mix
oleo, salt, vanilla, and coffee in a blender until smooth. Gradually
add sugar at slow speed. If the frosting is watery add a little more
sugar. If it's too thick add a little hot water or more coffee.

Here's
another recipe, from the bag of "Chickasha Oklahoma Legend" Grandmother
Vera's recipes, that she gave Dad before she passed away...
Mystery Pie
20 round buttery crackers 1 cup sugar - 1/2 tsp baking powder 1 cup chopped nuts - 3 beaten egg whites whipped topping
Pre-heat
oven to 350 degrees. Crumble crackers. Add sugar, baking powder, and
nuts. Fold in stiffly beaten egg whites. Pour into a greased pan and
bake for 25 minutes. Let cool and cover with whipped topping, sprinkle
with more nuts.

that I have the bag of "Chickasha Oklahoma Legend" Grandmother Vera's
recipes, that she gave Dad before she passed away, soon I hope to start posting new recipes here twice a week...
Mexican Corn Salad
3 ribs celery - 1 small red onion 1/2 sweet green bell pepper - 4 oz pimientos 16 oz can whole kernel yellow corn, drained 16 oz can white corn, drained 1/2 cup white vinegar, 1/2 tsp mustard salt & pepper to tastte
Dice celery, onion, green pepper, & pimientos. Combine with corn.
Mix vinegar, mustart, salt, & pepper. Pour over vegetables. Cover and refrigerate for several hours. Enjoy!

Now that I have the bag of "Chickasha Oklahoma Legend" Grandmother Vera's recipes, that she gave Dad before she passed away, as soon as the holidays are over I hope to start posting new recipes twice a week...
Banana Fudge-Walnut Brownies
Melt over low heat, stirring constantly:
1/4 cup oleo 6oz Semisweet Chocolate Chips
Stir in with spoon:
3/4 cup Flour 1/2 cup sugar 1/4 tsp Baking Powder 1/4 tsp Salt 1/2 tsp Vanilla 1/3 cup crushed walnuts 1 small Mashed Ripe Banana
Spread evenly over greased 8 inch square pan, bake 350 degrees for 30 minutes, let cool, enjoy!

Just

Corn Casserole
1 (15oz) can cream style corn 1 (4oz) can chopped green chili 2 Tbs flour - 1 tsp sugar 1/2 tsp salt - 2 eggs beaten 1/8 tsp oregano
Combine all ingredients. Pour into greased casserole dish, dot with butter. Bake 30 minutes at 350 degrees.

that I have the bag of "Chickasha Oklahoma Legend" Grandmother Vera's
recipes, that she gave dad before she passed away, I will be posting
new recipes twice a week...
Eggplant Dressing
Peel
& cut 1 large or two small eggplants into small pieces. Dice onion
and celery as desired and boil all three ingredie with three chicken
bullion cubes in 1 1/2 cups of water until well done, then add 1 tsp of
poultry seasoning, 1 tsp of sage, 1-2 tbs dried red pepper flakes,
& a dash of tabasco, salt & pepper to taste, + 3 oz cornmeal.
Top with grated cheese and bake in 400 degree oven for 30 minutes.
Makes 3 huge servings.

Dad
gave me the bag of "Chickasha Oklahoma Legend" Granmother Vera's
recipes, that she gave to him before she passed away, so I will be
typing them up now to post here...
Chili-Cheese Grits
4 packets instant grits 2 cups water - 2 eggs beaten 2 Tbs tomato paste 1 Tbs chili powder 1 1/2 cup shredded jack cheese
Place
grits in bowl and stir in boiling water. Stir until thickened and
smooth. Gradually beat about 1 cup of hot grits into eggs. Return
remaining grits into eggs with tomato paste and chili powder. Stir in
cheese.
Pour into buttered 8in square baking dish. Bake at 350 degrees for 30 minutes or until set.

years ago Vera gave me an envelope with a large amount of recipes in
it. Over 50 are in her hand writing and the rest came from just
everywhere she could clip them out. I will be sending these out typed.

Claudene's high school days (Over 15 years ago).
Salad Dressing
Put into the blender container:
1 egg 1 teaspoon salt 1 teaspoon sugar 1 teaspoon mustard 1/2 teaspoon paprika 3 tablespoons vinegar or lemon juice
Cover,
switch on the motor for just a few seconds, then remove the lid and add
gradually, with the motor running, 1 1/2 cup salad oil. Blend
until very thick and smooth.

CRUNCHY APRICOT CAKE
1 16 ounce apricot pie filling 1 package 1 layer white cake mix 1 egg 1/3 cup water 1/2 cup flaked coconut 1/2 cup chopped pecans 1 cube oleo , melted
Spread pie filling in bottom of 9 X 13 X 2 pan.
Combine
cake mix, egg & water. Beat until smooth and pour over pie filling.
Sprinkle with coconut & pecans. Drizzle melted oleo on top. Bake at
350 for 40 minutes.

Here's another of "Chickasha Oklahoma Legend" Grandmother Vera's recipes that Dad sent this week...
Several
years ago Vera gave me an envelope with a large amount of recipes in
it. Over 50 are in her hand writing and the rest came from just
everywhere she could clip them out. I will be sending these out typed.

read them. Some are dated in the 70s and one seems to be from
Claudene's high school days (Over 15 years ago).
Three
days ago I tried this and it came out, the best apple cobbler
I've tasted. I changed the recipe a little. I used water instead
of half & half. I accidentally used the 1/4 th cup of water when I
was making only a half order and should have used 1/8th cup. When I
stirred the mix it came out watery. I added another 1/4 cup of mix and
sat it in the freezer while the apples cooked. Then I spooned the
thikened mix on the apples evenly. I used a regular size cake pan
that was sprayed with cooking spray and dusted with flour.
Apple Cobbler
1/2 cup sugar 1 cup baking mix 1/4 cup butter (I used a little more thant that) 1/4 cup half & half 1/4 th Teaspoon of vanilla 2-21 ounce cans, fruit pie filling
Heat
oven to 375 degrees, mix sugar, baking mix, cut in butter, mix in
cream, vanilla, shape in balls and refrigerate 30 minutes. Pour fruit
into 7 X 11 pan. Heat 10 minutes in the 375 oven. Roll chilled
dough out on floured surface. Place over hot fruit. Bake 25 minutes or
until golden. Brush with melted butter (oleo). Sprinkle with sugar. The
crust will rise and become golden.
Remember,
I made a 1/2 recipe and spooned the crust over the apples. I used the
$1.29 can of pie cooking apples and sprinkled powdered sugar over the
top, once cooked. The $3.00 apples couldn't have been better.

BURNT SUGAR FUDGE
2 1/2 Cups of sugar 2 Table spoons of Karo syrup 1 cup Whipping cream
In
a large saucepan melt 1/2 cup of sugar until it is Carmel in color. Mix
remaining sugar, syrup, & cream together & add caramelized
sugar. It will look like a flop but keep stirring & it will mix
together. Cook to soft boil (234 degrees).
Then Add:
1/4 Tsp salt (A Dab) 1 Tsp Vanilla 1 Tsp. Soda
Beat
until it begins to thicken & then add 1 cup chopped pecans. Pour
into 9 X 9 Pan that has been buttered ahead of time. Let cool & cut
into squares, Enjoy.
Wednesday, September 13, 2006 Grandmother Vera's Banana Bread or Dad's Pumpkin Bread...
Dad
sent another of Chickasha Oklahoma Legend Grandmother Vera's recipes
that she had written for him before she passed away, he added some
notes of his own too, some of the notes I'm not sure which are his or
Vera's, so am copying and pasting it the way he sent it...
I
sprayed Pam on the inside of a small loaf baking pan. Then put flour in
it and slightly coated the Pam with flour. Discard excess flour.
Banana Bread !/2 cup Butter , Oleo or Shortening 1 Cup Sugar 3 eggs 3 bananas mashed 2 Cups of Flour 1 Teaspoon Soda Nuts if desired
The
way I changed the above recipe is I used one 16 ounce can of pumpkin
instead of bananas. Really, the way one reacts to this it may turn out
to be Banana Bread or Pumpkin Bread. Cook in the oven at 325 for one
(1) hour. Vera sometimes used 2 eggs if they were expensive and three
if the eggs were on sale. I used one cup of slightly chopped pecans.
I've seen Vera add some cinnamon in this before she stirred it all up
with a big spoon.
Substituting
Bananas with Pumpkin sounds interesting, I may just try making some
Chocolate/Pumpkin Nice Cream and if it works will post the recipe here

had written in February that Deb's mother (Seth and Caleb's Great
Grandma Virginia) was going through chemotherapy, we just found out
that after completing her last treatment Monday they ran tests and the
results that came in say her cancer is gone, would like to thank those
who have prayed for her...

Quick Cobbler
1 stick of oleo 1 quart of fruit 3/4 cup of sugar 1 cup of flour 2 teaspoons of baking soda 3/4 cup of milk
Mix
oleo, sugar, baking powder, milk & flour. Pour in a baking pan.
Sweeten fruit to taste and pour on top of the mix. Bake at 400 degrees
for 25 minutes.
1 quart of fruit equals 4 cups. This is fast
& good. I use the big can of fruit & add 1/2 cup of water. The
dough cooks to (comes to) the top. Something fast and I like it.
Dad adds:
I made up 1 & 1/2 times the dough recipe, used one big can of
sliced peaches and one medium can of pie filling, cut up apples and I
cooked it 30 minutes in two 7 X 7 pans. Cooking it 5 minutes extra made
the top a bit tougher and not adding water made the inside taste OK but
needing a wee bit more moisture.

Baked Onions 2 large yellow or white Onions, peeled 2 TBSP Tomato Juice 1 1/2 tbsp Honey 1/2 tsp Salt 1 tbsp Butter or Margarine
Cut
onion in half, crosswise and place, cut side up, in a baking dish.
Combine remaining ingredients in saucepan on low until butter is
melted. Stir well. Pour over center of each onion half and bake at 350

Frozen Cherry Salad
1 can cherry pie filling 1/2 cup chopped pecans 1 small can of crushed pineapple (drain the juice off) 1 banana cut up in small pieces 1 large carton of cool whip
Mix
together . put in a dish to freeze or in individual muffin paper cups
& freeze...To use for salad or desert keep covered with foil or
plastic wrap.

Chickasha Green Peas
4 Teaspoons of butter or oleo 1/2 cup of finely chopped onion. 2 One pound bags of frozen green peas 1 Cup of boiling water 2 Chicken bullion cubes
1. In large pot, saute onions in the margarine/butter over low heat until transparent & slightly caramelized (Light Brown). 2. Add frozen green peas , water & bullion cubes to pot. 3. Cook 5-10 minutes until peas are just done & tender crisp. Remove from heat. Don't over cook.
This doesn't sound as good as it taste , when served with a baked hen , yeast rolls and Native Honey.
If
there was anyone that was looking forward to this months Angleton City
Council Report, well, I'm sorry, because there won't be one, decided to
go crabbing with Deb instead of going to it, and in about 30 minutes we

Rice With Green Chilies
3 Cup of cooked 3 minute rice 1/2 Sour cream, 1/2 Cup of milk, 1/2 Tsp Salt 1 Can (4 ounce) Green Chilies chopped 1 Cup grated Monterey Jack Cheese Dash Paprika
Combine
first five ingredients along with 1/2 cup of cheese. Spoon into
buttered 1 1/2 quart casserole. Top with remaining cheese. Bake
in 350 degree oven for 25 to 30 minutes. Let it look done.
Chickasha BBQ Beans
2 tablespoons of olive oil 2 cups of chopped onions 1 can (28 ounces) diced tomatoes with Italian seasoning 1 can red kidney beans rinsed and drained 1 can black beans rinsed & drained 1 can pinto beans rinsed and drained 1 can (15 ounce) tomato sauce 1/3 cup of honey 1/2 cup of good quality BBQ sauce 2 tablespoons instant coffee granules 1/2 tablespoon hot sauce Salt & Pepper, to taste
In
a large pan, heat oil, add onions and simmer until tender, about 10
minutes... Add remaining ingredients. Simmer 30 minutes until mixture
thickens. Stir in salt and pepper to taste. Enjoy!

Potato Salad
4 large boiled potatoes cut in small squares 1/2 cup finely chopped onions 1/4 cup real lemon juice, 1 teaspoon sugar 1 cup mayonaise
Boil potatoes until tender. Mix lemon juice, sugar, & mayonaise and salt & onions --pour over potatoes and mix.
Chocolate Chip Cookies
1 cup of butter or oleo, 2 eggs 1/2 cup sugar, 3/4 cup brown sugar 1 box (3.4 oz) instant vanilla pudding 2 1/4 cup flour, 1 teaspoon soda 1 teaspoon vanilla, 1 cup nuts chopped. 2 cups sweet chocolate chips
Oven
at 375, mix the ingredients. Place the small balls of cookie dough on a
lightly greased cookie sheet and press lightly with one finger on each
cookie.
Note
from Dad: Vera didn't say how long to cook the cookies but you can
watch them closely, as she did, and take them out when lightly browned.
She told me to wait until the cookies cooled to eat them but she never
waited for them to cool for her to nibble on them.

Wednesday, June 14, 2006 Grandmother Vera's Regular and Jalapeno Cornbread!

knee is getting better every day, we went fishing last night and
although we weren't out there long, we had a great time...

Regular Corn Bread
1 cup sifted flour, 1 cup corn meal 4 teaspoons baking powder, 1/2 teaspoon salt 1/4 cup shortning, 2 eggs, 1 cup buttermilk
Mix
this lightly and bake in 400 oven about 14 minutes. (I bake this
in an iron skillet that Vera gave me and I heat and grease the skillet
in the oven before I put the mix in the skillet).
Jalapeno Corn Bread
3 Cups of Corn Meal Mix. I add one teaspoon of baking powder. 3 eggs beaten (She always bought Jumbo) 1 1/2 cup of Sweet milk (Same as whole milk) 3 tablespoons of Sugar, 1/2 cup of oil 1 16 ounce can of creamed style corn, 1 Large chopped onion 1 1/2 cup of grated Cheddar cheese 4 more or less Jalapeno Peppers, chopped or sliced (I suggest you start with 2)
I
beat the eggs in a large bowl. Then add every thing else , but for the
cheese. When mixed good , I add the cheese. Bake at 375 or
400. I use a 11 X 16 inch cookie sheet with a one inch rim.
It cooks nicely in iron skillet . Just don't fill to full. (This
is Jim -grease the cooking pan and heat it before pouring the mix in
it). Vera didn't say how long to cook this but you can just watch
and do your best as you see it getting done on top-I also suggest the
350 setting. She would cook this and immediately eat a big portion and
save the rest cut up in squares and stored in a big bowl , covered with
plastic or foil and placed in the "ICE BOX". Vera liked the 4 pepper
ingredient but I do suggest the two pepper one for your first
try. If you slice the hot peppers I suggest you cut them as thin
as you can.

Since
yesterday's recipes were so poular and I don't really have anyting to
write today, here is another re-post from a few months ago of
"Chickasha Oklahoma Legend" Grandmother Vera's recipes that Dad has
typed up..
Several
years ago Vera gave me an envelope with a large amount of recipes in
it. Over 50 are in her hand writing and the rest came from just
everywhere she could clip them out . I will be sending these out typed.

Claudene's high school days (Over 15 years ago).
Vera's Quick Rolls
Stir together :
2 packages dry yeast, 1 cup white flour 2/3 cup powdered milk 3 tablespoons sugar, 1 teaspoon salt
Now add:
2 1/2 tablespoons soft margerine one & 1/2 cup "HOT" water
Stir
until margerine melts. At very last stir in 3 cups unsifted whole wheat
flour. Cover & let rise for 15 minutes. Turn out on floured board
and knead until it doesn't stick to hands. Pat it out to 3/4 inch
thickness and cut with glass or cookie cutter. Put on greased cookie
sheet and let rise for about 15 minutes. Bake at 400
degrees for 10 minutes or looks done.
Corn - Oat Pones
1 cup chopped pecans , 2 cups yellow corn meal 2 cups oats , 1/2 teaspoon salt 1/4 cup olive oil, 1 & 3/4 cup boiling water
Mix
first 4 ingredients. Add oil & boiling water. Mix well and let
stand 30 minutes. Make out in cakes. Put thum prints in cakes . Bake
for 30 minutes at 350 degrees. Then turn oven to 300 & bake for 2-3
hours . Bake slow until crisp. Best when not too brown.
Keep in air tight container. (I doubt the time she said to cook these.
Then who am I to question Vera)

Tuesday, June 06, 2006 Grandmother Vera's Oven Fried Green Tomatoes and No Name Cake
Here is a re-post from a few months ago of "Chickasha Oklahoma Legend" Grandmother Vera's recipes that Dad has typed up..
Several
years ago Vera gave me an envelope with a large amount of recipes in
it. Over 50 are in her hand writing and the rest came from just
everywhere she could clip them out . I will be sending these out typed.
All that I send will be from Vera's own hand writing and the best I can
read them. Some are dated in the 70s and one seems to be from
Claudene's high school days (Over 15 years ago).
Oven Fried Green Tomatoes
1/2 cup corn meal, salt/pepper 1 egg, 1 tablespoon water
Combine
cornmeal, salt, pepper and set it aside. Egg & water, beat well.
Dip sliced green tomatoes in egg mixture & cover well with cornmeal
mixture. Lightly coat big cookie pan with cooking spray. Place tomato
slices in single layer in pan. Bake at 450 for 30 to 40 minutes or
until golden brown. Turn once. Enjoy!
No Name Cake
20 ounce can cherry pie filling 20 ounce can crushed pineapple with juice 1 box yellow cake mix, 1 cup coconut 1 cup chopped pecans, 3/4 cup melted oleo
Mix ingredients in order given. Bake in loaf or flat pan. 350 degree oven.
Real

Tuesday, March 28, 2006 Grandmother Vera's Lemon Jello Cake!
Things
have changed once again, I'm posting Grandmother Vera's Recipes today
and the report on Charlie giving the Angleton City Council a piece of
his mind tomorrow (Wednesday), then will post Monday's feature on
Thursday...
And now that we have that out of the way...
LEMON JELLO CAKE
1 3 ounce package of Lemon Jello 3/4 Cup of Boiling water, 2/3 Cup Wesson Oil 4 whole eggs, 1 Box Lemon Supreme cake mix
Dissolve jello in hot water. Add oil,
eggs, cake mix. Blend well. Grease and flour a 9 X 13 pan.Bake in
300 degree oven for 30 minutes or until toothpick inserted in center
comes out dry and clear...
While baking, make icing...
5 Tablespoons of oleo or butter Juice of 2 lemons, 2 cups of powdered sugar
Blend until smooth and have ready to spread on cake while the cake is hot. The icing will soak into the cake.

1 cup butter , 2 cups sugar, 2 tablespoons cocoa 4 eggs, 1 teaspoon vanilla, 1 1/2 cups all purpose flour 1 1/2 cup shreaded coconut, 1 1/2 cup chopped nuts 1 large jar marshmallow cream
Cream butter , sugar ,
cocoa (mix well). Add eggs , vanilla , flour ,
coconut & nuts . Beat 2 minutes, bake in greased & floured pan
for 30 minutes at 350 degrees. Can bake in 2 cake pans or one 9 X 13
aluminum pan. When done spread Marshmallow Cream on hot cake & let
cool.
Icing For Mud Cake
1 one pound box powdered sugar, 1/2 cup butter (oleo), 1/2 cup evaporated milk 1/4 cup cocoa, 1 teaspoon vanilla .
Beat ingredients and spread on cake. Let icing & cake cool. Take care, God Bless, and have a Wonderful Wednesday.....Mikey

a busy day today, will be going with Caleb and Henry to the Observer
Breakfast in about 30 minutes and haven't set up the Flea Market Booth
yet, as well as going to get Deb her anniversary gift (we will have
been married for 9 years on the 22nd) in Lake Jackson and Henry and I
working at the Flea Market Booth from 4 to 6pm CT, not much time to
write, so here is another of Grandmother Vera's recipes that Dad has

Cake Icing
1 can of milk, 1 1/2 cups of sugar 1 1/2 sticks of oleo, 1 teaspoon vanilla
Cook
until thick. Remove from heat. Let stand 12 minutes, add pecans and
pour on cake. (Vera didn't say how many pecans but I'd guess about 1/2
cup,chopped).

Wednesday, March 01, 2006 Grandmother Vera's Salmon Croquettes & Potato Salad
My
Dad found a bunch of recipes that Grandmother Vera had written for him

1 (15 oz) can Salmon , 1 egg 1/2 cup flour , 1 teaspoon baking powder.
Drain juice , add 1 beaten egg ,
flour & Baking powder. Beat with a fork . Drop by the
spoonfuls into hot grease.
4 large boiled potatoes cut in small squares, 1/2 cup finely chopped onions 1/4 cup real lemon juice 1 teaspoon sugar, 1 cup mayonaise
Boil potatoes until tender. Mix lemon juice, sugar & mayonaise and salt & onions - pour over potatoes and mix. Charlie was unfortunately not at last night's Angleton City Council meeting, but it was more interesting and informative than I thought it would be, so
will write tomorrow about some of the things that happened and I hope
have another Feature here about something a citizen addressed to the
