Grandmother Vera's Quick Rolls and Corn - Oat Pones

Here is another of Grandmother Vera's recipes that Dad has typed up...

Several years ago Vera gave me an envelope with a large amount of recipes in it.  Over 50 are in her hand writing and the rest came from just everywhere she could clip them out . I will be sending these out typed. All that I send will be from Vera's own hand writing and the best I can read them.  Some are dated in the 70s and one seems to be from Claudene's high school days (Over 15 years ago).

Vera's Quick Rolls
 
Stir together :
2 packages dry yeast, 1 cup white flour
2/3 cup powdered milk
3 tablespoons sugar, 1 teaspoon salt
 
Now add:
2 1/2 tablespoons soft margerine
one & 1/2 cup "HOT" water

Stir until margerine melts. At very last stir in 3 cups unsifted whole wheat flour. Cover & let rise for 15 minutes. Turn out on floured board and knead until it doesn't stick to hands.  Pat it out to 3/4 inch thickness and cut with glass or cookie cutter. Put on greased cookie sheet and let rise for about 15 minutes.  Bake at 400 degrees  for 10 minutes or looks done.

Corn - Oat Pones
 
1 cup chopped pecans , 2 cups yellow corn meal
2 cups oats , 1/2 teaspoon salt
1/4 cup olive oil, 1 & 3/4 cup boiling water

Mix first 4 ingredients. Add oil & boiling water. Mix well and let stand 30 minutes. Make out in cakes. Put thum prints in cakes . Bake for 30 minutes at 350 degrees. Then turn oven to 300 & bake for 2-3 hours . Bake slow until crisp.  Best when not too brown.  Keep in air tight container. (I doubt the time she said to cook these. Then who am I to question Vera)

It's Crepe Myrtle Pruning Time Again!


As I mentioned at this time last year, under the guidance of Randy Lemmon, by listening to his show Gardenline on AM740 KTRH in Houston (also available online in streaming audio), I've been relandscaping the front yard for the last 5 years, mostly by myself, which has included sculpting what are turning into some pretty wicked looking Crepe Myrtle trees...

According to Randy's advice, which has worked very, very well so far, to get maximum blooms you are to prune Crepe Myrtles during the time frame one week either side of Valentines Day, I take my time, pruning off everything smaller than a number 2 pencil and twist the smaller branches back into the tree, I also have to be careful of the Jasmine, that I have winding around one of the Crepe Myrtles so they won't be so ugly during the winter (note, if you do this, don't have them going around the trunk), which are just now beginning to bloom, should have the pruning finished before the two weeks are over with...

Will also be pruning the rose bushes during this time (but will be pruning hardly any off of them), as well as the Mimosa Tree that I'm also sculpting, hope everyone has a Wonderful Week, take care and God Bless.....Mikey

Grandmother Vera's Oven Fried Green Tomatoes and No Name Cake!

Oven Fried Green Tomatoes
 
1/2 cup corn meal, salt/pepper
1 egg, 1 tablespoon water

Combine cornmeal, salt, pepper and set it aside. Egg & water, beat well. Dip sliced green tomatoes in egg mixture & cover well with cornmeal mixture. Lightly coat big cookie pan with cooking spray. Place tomato slices in single layer in pan. Bake at 450 for 30 to 40 minutes or until golden brown. Turn once. Enjoy!

No Name Cake
 
20 ounce can cherry pie filling
20 ounce can crushed pineapple with juice
1 box yellow cake mix, 1 cup coconut
1 cup chopped pecans, 3/4 cup melted oleo
  
Mix ingredients in order given. Bake in loaf or flat pan. 350 degree oven.

LEMON JELLO CAKE
 
1 3 ounce package of Lemon Jello
3/4 Cup of Boiling water, 2/3 Cup Wesson Oil

4 whole eggs, 1 Box Lemon Supreme cake mix

Dissolve jello in hot water. Add oil, eggs, cake mix.  Blend well. Grease and flour a 9 X 13 pan.Bake in 300 degree oven for 30 minutes or until toothpick inserted in center comes out dry and clear...  

While baking, make icing...

5 Tablespoons of oleo or butter
Juice of 2 lemons, 2 cups of powdered sugar

Blend until smooth and have ready to spread on cake while the cake is hot. The icing will soak into the cake.

Here is another of Grandmother Vera's recipes that Dad has typed up...

Several years ago Vera gave me an envelope with a large amount of recipes in it.  Over 50 are in her hand writing and the rest came from just everywhere she could clip them out . I will be sending these out typed. All that I send will be from Vera's own hand writing and the best I can read them.  Some are dated in the 70s and one seems to be from Claudene's high school days (Over 15 years ago).

Mississippi Mud Cake
 
1 cup butter , 2 cups sugar, 2 tablespoons cocoa
4 eggs, 1 teaspoon vanilla, 1 1/2 cups all purpose flour
1 1/2 cup shreaded coconut, 1 1/2 cup chopped nuts
1 large jar marshmallow cream

Cream butter , sugar , cocoa (mix well).    Add eggs , vanilla , flour , coconut & nuts . Beat 2 minutes, bake in greased & floured pan for 30 minutes at 350 degrees. Can bake in 2 cake pans or one 9 X 13 aluminum pan. When done spread Marshmallow Cream on hot cake & let cool.

Icing For Mud Cake

1 one pound box powdered sugar,
1/2 cup butter (oleo), 1/2 cup evaporated milk
1/4 cup cocoa, 1 teaspoon vanilla.
   

Beat ingredients and spread on cake. Let icing & cake cool.

Grandmother Vera's Salmon Croquettes & Potato Salad!

Busy and almost forgot to post a new recipe today, going to have to post a couple of the earlier ones...

My Dad found a bunch of recipes that Grandmother Vera had written for him and is typing them up, one or two of them will be featured here every Wednesday...

Several years ago Vera gave me an envelope with a large amount of recipes in it.  Over 50 are in her hand writing and the rest came from just everywhere she could clip them out . I will be sending these out typed. All that I send will be from Vera's own hand writing and the best I can read them.  Some are dated in the 70s and one seems to be from Claudene's high school days (Over 15 years ago).

Salmon Croquettes
 
1 (15 oz) can Salmon , 1 egg
1/2 cup flour , 1 teaspoon baking powder.
 
Drain juice , add 1 beaten egg , flour & Baking powder. Beat with a fork .   Drop by the spoonfuls into hot grease.
 
Potato Salad
 
4 large boiled potatoes cut in small squares,
1/2 cup finely chopped onions
1/4 cup real lemon juice
1 teaspoon sugar, 1 cup mayonaise

 
Boil potatoes until tender. Mix lemon juice, sugar & mayonaise and salt & onions - pour over potatoes and mix.

Roswell (NM) Aliens...

As mentioned in my profile, I attended Roswell High School in Roswell, New Mexico, so am asked a lot about the Roswell Aliens, have no idea if the claims made by the folks are true, so I just tell those who ask what I know...

When living there, with so much land available in the city (there was more than one trail where a kid could ride a dirt bike, popping off the bike to walk it across the streets, all the way around Roswell) the City of Roswell was constantly trying to get folks to move there, at the time they were trying to make it a retirement haven...

While going to Middle School and High School in Roswell for four years, aliens were mentioned only one time in 7th grade, where some of the local kids told me about how the Bottomless Lakes in Bottomless Lakes State Park (some miles away from where the aliens landed) were craters created by aliens landing in their space ships...

I was a Rock Hound as a kid and spent a lot of time during my Sophomore year in the area near where the aliens landed, after discovering there was a great abundance of Rose Quartz specimens and some geodes there...

Whether you believe in the Roswell Aliens or not, the Roswell Alien Museum (formerly the old Plains Theater) is a fun place to visit, but if you are going to buy souvenirs, the Alien Gift Shops near it are a lot cheaper...

I saw the movie 2001: A Space Odyssey in the Plains Theater, it was a double feature with Joe Cocker's/Leon Russell's Mad Dogs and Englishmen, but liked The Kansas City Bomber and Billy Jack (which I also saw there) better...

The only other thing I know about this is that I am not an alien, or if i am, I don't know it, hope everyone is having a really Great Thusday, take care and God Bless.....Mikey

It Was A Dark And Stormy Tuesday...

We finally got some rain here and a bunch of it, all the soil in this area was soaking it up too, the land was so dry that when I took the MikeyWearMobile in the middle of the storm to Lake Jackson to take Debbie lunch I didn't see any street flooding, but BarbedWire Bob told me that the Weather Chanel said it's going to rain every day this week except Thursday, so that may change, don't know how that is going to affect the Great Texas Trash Off,  will go down the street to TXDOT tomorrow to see what they suggest we do if there is that much rain...

The rain cleared right before it was time to go to the Angleton City Council meeting, Charlie was there and I was ready to take notes of him giving them a piece of his mind and photos after getting it OKed with Charlie and Angleton's Public Works Director (because I had his email address)

I decided to go ahead and read to the Council the statement I had prepared...

To market my new line of quality infant and toddler clothing, I am mixing old and new marketing techniques in a unique way to combine real world Angleton and the Brazosport Area with virtual world America, writing about and posting photos of this city, what it is doing, and some of it's characters, on MikeyWear.Com and it's blog...

Since most cities would not put up with what I am doing because it's so odd, I would like to thank the city of Angleton and it's residents for allowing me the opportunity to pursue the American dream in this city...

I would like to thank the Angleton Police Department, for keeping a close eye on my Flea Market booth to keep it from being vandalized...

And I would like to assure everyone I will continue to give credit to Angleton for this opportunity
