Suzanne's Thanksgiving Sides For Diabetics

Recipes By Suzanne
 
ORANGE-LIME SWEET POTATOES

Butter-flavored vegetable cooking spray
1 cup chopped onion
1 teaspoon minced garlic
1 pound sweet potatoes, peeled, cut into 1-inch pieces
1 cup orange juice - 1/4 cup lime juice
Salt and pepper, to taste

Spray medium skillet with cooking spray; heat over medium  heat until hot. Saute onion and garlic 3 to 4 minutes.

Add sweet potatoes and juices to skillet; heat to boiling. Reduce heat and simmer, covered, until potatoes are tender, about 10 minutes. Cook, uncovered, until sauce is thickened, 8 to 10 minutes. Season to taste with salt and pepper.

Nutritional Information Per Serving:
Calories: 95, Fat: 0.3 g, Cholesterol: 0 mg,
Sodium: 9 mg, Protein: 1.7 g, Carbohydrate: 22.3 g
Diabetic Exchanges: 1/2 Fruit, 1 Bread

HERB-CRUMBED BROCCOLI

Butter-flavored vegetable cooking spray
2-4 tablespoons chopped pecans
1/4 cup dry unseasoned breadcrumbs
1/2 teaspoon dried marjoram leaves
1/4 teaspoon dried chervil leaves
2 tablespoons finely chopped parsley
1-1/2 pounds broccoli, cut into florets and stalks sliced, cooked
Salt and pepper, to taste

Spray small skillet with cooking spray; heat over medium heat until hot. Add pecans and spray with cooking spray; cook over medium heat until toasted, 2 to 3 minutes, stirring frequently. Add breadcrumbs, marjoram, and chervil to skillet; cook until crumbs are toasted, 3 to 4 minutes, stirring frequently. Remove from heat and stir in parsley.

Season broccoli with salt and pepper to taste; arrange in serving bowl. Spoon crumb mixture over broccoli.

Calories: 61, Fat: 2.1 g, Cholesterol: 0 mg,
Sodium: 64 mg, Protein: 3.7 g, Carbohydrate: 8.7 g

Flavorful Chili...

This started out as spaghetti sauce one night back in the early 80s and then I worked on it for a couple of decades until I had a recipe that I could really be proud of...

Mikey's Flavorful Chili
 
6 lbs Ground Chuck
2 Large Baking Potatoes
4 - 6oz Cans Tomato Paste
1 - 10oz Can Tomato Puree
1 - 15oz Can Ricos Condensed Cheese Sauce
1 - 1.31oz Package Sloppy Joe Seasoning
1 - 1.37oz Package "Thick and Zesty" Spaghetti Sauce Mix
1.5oz Gebhart Chili Powder
1 Tablespoon of Black Pepper
1 Teaspoon Garlic Pepper
4 Cups Water + Water Needed To Rinse Out Cans

Pour 4 Cups Water into pot and heat it on stove at a little higher than simmering temperature, empty Tomato Paste, Tomato Puree, & Cheese Sause, rinsing each can twice with water and spoon and pouring into pot, stir in Sloppy Joe Seasoning, Spaghetti Sauce Mix, Chili Powder, Black Pepper, & Garlic Pepper, stir once every two or three minutes...

Peel Potatoes and run them through a cheese grater, rinse thouroughly and put them in pot, stir once every minute or two...

Brown Ground Chuck until fully cooked (either 1 or 1 1/2lbs at a time), drain grease, and put into pot...

Turn heat down to simmering temperature and place lid on pot, take lid off to stir every four or five minutes for an hour, then enjoy!

Grandmother Vera's Cake Icing!

Here is a repost of one of Grandmother Vera's recipes that Dad has typed up...

Several years ago Vera gave me an envelope with a large amount of recipes in it.  Over 50 are in her hand writing and the rest came from just everywhere she could clip them out . I will be sending these out typed. All that I send will be from Vera's own hand writing and the best I can read them.  Some are dated in the 70s and one seems to be from Claudene's high school days (Over 15 years ago).

Cake Icing

1 can of milk, 1 1/2 cups of sugar
1 1/2 sticks of oleo, 1 teaspoon vanilla

Cook until thick. Remove from heat. Let stand 12 minutes, add pecans and pour on cake. (Vera didn't say how many pecans but I'd guess about 1/2 cup,chopped).

One day soon I will be posting here regularly again, I promise, will make a point of remembering to get Dad to type up more of Grandmother's recipes for Wednesdays, and for those that read about about the online entrepreneurial resources in the last "Update" post and want to know about more of them, I will have a post dedicated to the new ones I'm advertising on, as well as more about the previously mentioned ones, as soon as the banners are up on the new ones, hope everyone has a really Terrific Thursday, take care and God Bless.....Mikey

Suzanne's Baked Potato Soup!

To get back in the swing of things, here is another of "Suzanne's Recipes"
 


Recipes By Suzanne
 
Baked Potato Soup

4 baking potatoes - 2/3 cup butter
2/3 cup all-purpose flour - 6 cups milk
1 cup chopped green onions - 3/4 teaspoon salt
1/2 teaspoon ground black pepper - 12 slices bacon
5 ounces shredded Cheddar cheese
1 (8 ounce) container sour cream

Bake potatoes 1 hour in a 400 degree F (200 degree C) oven. Scoop out the inside of the potatoes and set aside. Reserve the skins for another recipe or discard.
 
Melt the butter in a large skillet over medium low heat. Stir in the flour to make a roux. Cook about 1 minute, stirring constantly. Gradually pour in the milk while stirring until all the milk has been added. Bring heat to medium and keep stirring until the soup mixture starts to get thick.

Add the potatoes, green onions, salt, ground black pepper, bacon and cheese. Stir well and continue to heat for about 15 minutes, allowing the flavors to blend. Stirring well, mix in the sour cream until well blended with the soup. Serve immediately.

Bunches of Updates...

Yeah, I haven't been on MySpace much, it's just been real frustrating to use with a dialup and I haven't felt like staying up all night to have time on it when the servers aren't overloaded, but I will be posting on the blog regardless this weekend, now that the Borat movie has hit the theaters and they won't be having the ads for it that slow the main pages to a crawl, things should be better...

So I've spent a lot of my net time on the Ryze.Com business networking site, have gotten record results from it and haven't begun to start figuring out how to best utilize it, although folks say it's not what it was, I'm overwhelmed with all the opportunities and don't know where to start...

Have gotten a great response from the banner rotation at the Brazosport Facts newspaper's web site, but didn't know where to go from there, but on Ryze have learned a whole lot about how to best utilize banner ads, also have banner ads going on sites that I found out about on Ryze, started with the banner rotation on Christian Work At Home Dads and got such a great response that iamnotagenious.com is now part of the banner rotation at Christian Work At Home Moms  and was able to get such a good deal at the Work At Home Promotion web site that iamnotagenious.com is not only on the banner rotation, but there are two ad buttons up there too, one with the "Sissy Merry Christmas" design (which 10% of the commissions will go to BACH) and the other has the "Poco Feliz Navidad" design (which 10% of the commissions will go to NACER.ORG), all of these work at home sites are great resources, for not only home businesses, but any small business...

Also, starting this Friday, iamnotagenious.com will have a half banner in the rotation on the top right corner of the San Marcos Daily Record newspaper's web site, where I got a great response last month with print ads at the Record and "Precision Crafted" junk mail to selected businesses, I have plans for other newspaper's web sites when the funds are available...

Meanwhile, after the current print ads run out at THE FACTS, I'm going to have to put print ads on hold till the sales of the remaining MikeyWear start coming in, which probably won't be until the holiday shopping season is in full swing, unless eBay'ers decide they are a collectible item (which, due to the limited quantity, I believe they eventually will) before that...

I am using the iamnotagenious.com project to help folks find out that BACH is not just BACH-ECI (NB-3 years old) and offers therapy and support to children up to 12 years old who have developmental delays or disabilities and their families, not sure about the details, but will get them from KC and post about them on the blog, meanwhile I remembered today to put new fliers with BACH as the new Non-Profit Organization of the Month on the back windows of the MikeyWearMobile and will be preparing some of my "Precision Crafted" junk mail this weekend to send out to selected businesses in Brazoria County...

Speaking of the MikeyWearMobile, the debate over whether it or the "lawnmower car" is the biggest eyesore in Brazoria County is continuing to bring interest to MikeyWear and iamnotagenious.com...

And here's a little trivia for you to impress your friends with, after Tuesday's elections, the stock market was real interesting yesterday, Apparel Stores were up .7%, while Apparel Clothing was down .56%, Footwear & Accessories were up .7%, Toys & Games were up 2.65% and Music & Video Stores were up 2.78%,  so it looks like Wall Street investors didn't think all the the changes that will be happening in Washington are going hurt holiday sales...

Also in yesterday's financial news, McDonald's October sales were up over 5% with the Monopoly game and new menu items, so I will be taking the MikeyWearMobile to McDonalds more often to get snacks when I am out and about, hope everyone has a Super Terrific Thursday, take care and God Bless.....Mikey

New Non-profit Oragnization of the Month, Houston Networking Event Next Tuesday...

Have been real overwhelmed the last couple of weeks and haven't posted much, still overwhelmed, but going to start posting again anyway to get back in the swing of things...

Since November is here,

And I'm going to be stuck in Houston's Westchase area at the beginning of afternoon rush hour next Tuesday, so have scheduled an informal networking event between there and the Galleria...

Almost Forgot To Mention...

Through the end of the year, 10 percent of commissions from the sales of iamnotagenious.com shirts and mugs with the "Sissy Merry Christmas" design will go to Bach ECI (Brazoria County Association for Citizens with Handicaps/Early Childhood Intervention)...

Let's get some BINGO Games Going!


I was actively involved in church youth groups from the end of 6th grade until the day I graduated from high school, then on graduation night I began to use drugs, when I decided to get off the drugs (a little over 16 years ago), what I had learned in those church youth groups made it a lot easier to understand what I had to do to get off and stay drugs...

One of my fondest memories when was when the first youth group I was involved in would go to a senior citizen's home and get a Bingo game going for them, we would bring white elephant gifts from home to give them as prizes and would play until all of them won something, one person would call the numbers, while others would help them mark their cards and know when to yell "Bingo!" and others would go around to visit those that didn't come to play Bingo, it was a lot of fun and it taught us a lot about helping others...

I would like for more church youth groups and youth organizations to do this, so I am in the process of purchasing 12 (to start with) Bingo cage sets, with cards and markers, to send to church youth groups or youth organizations that would like to go to an assisted living center (think that's what they call them now) and get regular Bingo games going in those facilities...

So I have all my ducks in a row, the church youth group or youth organization will need to have "all" of the the following info on the church's or organization's letterhead...

Why pay wheelbarrows full of money for a website?

One of the myths out there is that you have to pay tons of money to have a successful website, shell out bucks for the web hosting, shell out more for web design, shell out even more for search engine placement, etc...

Well, why not do it yourself and save all that money? It's not that hard...

There's a number of web hosting companies out there that include packages at an affordable price, where you can do it yourself, and they have it set up where it's easy to do all that...

The web hosting I use for
MikeyWear.Com and iamnotagenious.com is StartLogic.Com, it includes more than you will ever use to set up and maintain your website and the entire ProLogic package (what I use) is only $71.40 a year, the only problems I've had was because it was too easy and I tried to make it more complicated than it was (spent 48 hours to set up my 1st table, until I realized it set it up for me) and the non-outsourced tech support hasn't treated me like an idiot when I've had to call them, for even more support they have great tutorials and there's also a forum where you can ask helpful StartLogic users with experience about how to do things...

Yep, you can do it yourself for only
$71.40 a year...

And StartLogic isn't the only web hosting company out there like this, just don't know who they are because I haven't needed to look, if anyone knows of any others, please post about them in a reply to this post over on my blog on MySpace...

Grandmother Vera's Salad Dressing!

Here's another of "Chickasha Oklahoma Legend" Grandmother Vera's recipes that Dad sent me to share with you...

Several years ago Vera gave me an envelope with a large amount of recipes in it.  Over 50 are in her hand writing and the rest came from just everywhere she could clip them out. I will be sending these out typed. All that I send will be from Vera's own hand writing and the best I can read them. Some are dated in the 70s and one seems to be from Claudene's high school days (Over 15 years ago).

Salad Dressing

Put into the blender container:

1 egg
1 teaspoon salt
1 teaspoon sugar
1 teaspoon mustard
1/2 teaspoon paprika
3 tablespoons vinegar or lemon juice

Cover, switch on the motor for just a few seconds, then remove the lid and add gradually, with the motor running, 1 1/2 cup salad oil.  Blend until very thick and smooth.

1st thing, I would like to welcome the new readers that are visiting Angleton for the CPRA Finals Rodeo this Thursday through Saturday, as well as those that found out about this blog in the San Marcos and Lampasas, Texas, newspapers...

CRUNCHY APRICOT CAKE

1 16 ounce apricot pie filling
1 package  1 layer white cake mix
1 egg
1/3 cup water
1/2 cup flaked coconut
1/2 cup chopped pecans
1 cube oleo , melted


Spread pie filling in bottom of 9 X 13 X 2 pan.

Combine cake mix, egg & water. Beat until smooth and pour over pie filling. Sprinkle with coconut & pecans. Drizzle melted oleo on top. Bake at 350 for 40 minutes.
